For the potatoe salad:
-900 g potatoes / small new potatoes.
-Sprig of mint.
-(15-30 ml) olive oil.
-1 onion, finely chopped.
-175 g bacon / bacon, chopped.
-1-2 cloves garlic, crushed.
-(30 ml) chopped parsley.
-1-2 stalks green onions / chives.
-(15 ml) wine vinegar or cider.
-(15-30 ml) Irish grain mustard .
-Salt and pepper to taste.
